Still no resolution for this bug, but there is a new "format" allowed in the latest version of iBooks. For FXL books, it's possible to remove the book binding but keep the page turning effect:
<meta property="ibooks:binding">false</meta>This format doesn't have the magnification bug.

Have you been able to get the ibooks:binding - false to work? It doesn't seem to have any effect, neither removing the faux binding shadow, nor the faux pages at the edges. Maybe I'm doing it wrong?
