You can certainly change that in iCal's preferences. Here is an article that tells you what the different preferences do:
iCal 5.x: iCal General preferences
Specifically, you'll want to change this setting:
Start week on
Choose the day you want the week to start on in Week and Month view. You can choose any day of the week.

The main problem is that I can't change the beginning of week on my iPad. I'm changing it on my mac os x, but it doesn't influence on my iPad.
