Update: tried it again from my iPod Touch and got a message about the number not being registered with iMessage and asking if I want to use the person's email address instead. Had this happen with ANOTHER English friend's number, too.
Could it really be possible they don't have iMessage on? (Even though I'm pretty sure one of them's used it before.) And I didn't get an error message when I sent to the email...

Your UK friends need to check their settings to make sure iMessage is enabled (and working). Perhaps have them test with other iOS users on their end to make sure it is working for them.
Also, that the contact label (home, work, mobile, iPhone, etc.) in your Contacts for this person has no effect on this.

I was able to do a chat with an Apple Support person and he had me sign out of iMessage, turn off my phone for five minutes, turn it back on, and sign back into iMessage.
He said leaving it off for that length of time reset profiles with both Apple and my carrier and that sometimes you can enter areas with bad coverage and the phone retains that signal. (So my off and right back on wasn't enough to reset all of that.)

(Although, I didn't know the label didn't really matter. I figured it should be smart enough to know if a contact had an Apple ID number, but also figured the "iPhone" label was there for a reason. Other than more easily knowing who's the coolest. )
