why do they let you save Contacts but you don't get a chance to save anything else? this is an extremely confusing set of prompts and makes no sense to me at all.
what do you do if the Reminders or the Notes or the Bookmarks or whatever that are on my laptop are the ones that i want to keep? presumably there is a way to get this data to the cloud in place of what the cloud has?

Signing out of iCloud doesn't delete the data from iCloud, it only disconnects your Mac from iCloud. Signing back in reconnects it to your data again. There is a way to save iCloud data (see http://support.apple.com/kb/ht4910), but it can be a involved and if you are signing back into the account it's not necessary.
Replacing iCloud data can be a bit of a challenge. To replace iCloud data, back up the data on your Mac that you want to replace before signing into the account, then delete the synced iCloud data from your Mac, then import the backed up data back to your Mac. For example, to replace bookmarks, open Safari, go to File>Export Bookmarks. Then after signing into your account, delete the synced bookmarks on your Mac (which will delete them from iCloud), then import the saved bookmarks (File>Import Bookmarks), which will sync them to iCloud.
For Notes, you would need to email the notes to yourself, then delete the synced notes from iCloud, then recreate the Notes from your emails. Perhaps there's an easier way, but I'm not aware of it.
