I just got a new iPhone 4s from Sprint.
My MBP is running 10.5.8.
When I connected the 4s to my Mac, it asked if I wanted to upgrade my iTunes.
I did >> to 10.6.3.
Now, how do I sync Address book, iCal...?

First of all, you have a major problem because OS X 10.5.8, which is about three years old now, cannot support the latest iTunes which will be needed to sync your new iPhone (which presumably has iOS 6).
Putting that aside, answering "How do I sync Address Book, iCal ...?" will depend on what types of accounts you use to house these. But regardless, as I say, you cannot sync anything using iTunes on an OS X 10.5.8 machine.

Actually, you can sync a 4S running iOS 6 using iTunes 10.6.3, which can be installed on a Mac running OS X 10.5.8. You can't sync an iPhone 5, however, which requires iTunes 10.7 or higher, which in turn requires OS X 10.6.8 or higher.
