You select all text and then choose the font. Or if you have used Styles, change it for some text and Redefine the style and all text using the style will change.

But what if I use different fonts in the document and I want to change just one of them?

You ask about the whole document! Use styles, paragraph styles. One for each font. Apply to your paragraph and then you can change to your hearts content as I described above.
Download the Pages User Guide to learn more on what you can do with Pages. You download it from your Pages help menu.

Menu > View > Show Styles Drawer
Menu > Help > Pages User Guide
Download and read page 27 on creating and using Styles, which is done largely by example ie you make the text what you want then save it as a Style to be applied wherever you want in the document from the Styles Drawer.
