have you previewed your book (iPhoto '11: Preview a book, card, or calendar before you order or print it)? Do you see any text that has been truncated in the text boxes?
If not, then check the end of your text in the text fields, if there are any invisible characters, like tab stops, spaces, or empty lines.

If you don't see any such warnings lace the cursor at the end of the text in each text box and use the forward delete key several times.
There may be a return or two that has exceeded the text box's size and that would be what is causing the problem.
Before reordering be sure to create a PDF of the book as described in this Apple document: iPhoto, Aperture: Previewing an order in iPhoto or Aperture and check for any errors. keep the PDF file to compare with the hard copy when you receive it.
