What is your iPhoto version?
The keywords definitely should stay. You may have a corrupted iPhoto library that needs repairing.
As a test: Create a new iPhoto library, and test, if you have the same problem with lost keywords.
To create a new iPhoto Library for testing, hold down the options-key "⌥" while double-clicking iPhoto to launch and select "Create New". The same way you can switch back to your regular library.
If it works well in a new library, use the iPhoto Library First Aid Tools to repair the permissions and the iPhoto Library. If repairing does not help, back up and rebuild the library,
see this document on how to repair and rebuild: iPhoto 6 and later: Rebuilding the iPhoto library

This does help - the keywords actually stick instead of disappearing when typing them in. It's not particularly faster though - at least for me - I've been a secretary for 20+ years, and can type a heck of a lot faster than clicking on the screen - even if I have to re-type the same word four or five times.

It's iPhoto '11. (9.2.3)
The repair was easy and quick, but it promptly went back to dropping keywords. So I did the rebuild. (And, naturally, after that most of the thumbnails are missing, are or in the wrong place.) Now I've got it re-building the thumnails and recovering orphaned photos, which will take a while.
If this rebuild doesn't work, I'll trash the library, and restore from one of the two backups I made. I presume there's an easy place to find instructions for doing that?

It looks like the first attempt at re-building the thumbnails worked fine. So hopefully, everything will work now. (Just in case, I'm going to keep the two backups of the library I made before the repair/rebuild, and stash them on different drives, in case I need to re-do anything.) Thanks!

Everything seems to be fine now, following the repair/rebuild. Thanks for the help.
A couple of follow-up questions: 1) I know I've read articles which advise on the maximum library size which is best before you want to create and use new ones, but I don't remember what that is. Do you remember? I'm now up 10K photos.
2) 3K of those photos are duplicates. (During the rebuild, I chose the option to look for orphaned photos, which it claimed was 3K or so, but then at the end kept pointing out duplicates. Due to time constraints, I had to leave the computer running, so I just chose to import all duplicates rather than go thru them one by one.) So my question is, is there an easy way to tell the program to find dupes and delete?
