my bird calls recorded years ago have been replaced by an app which provides its own calls for each species. My problem now is that when listening to music, a song will be some raucous bird call, interrupting music listening. I need to get rid of these, badly!

iPhone 5, iOS 6

If you have deleted them from iTunes but they remain on the iPhone, that implies that you're manually managing music and video.  That means that you need to delete these manually from the iPhone -- either while connected to iTunes you navigate to the iPhone's contents to find the items to delete, or you can delete right from the iPhone by swiping your finger across the bird call's name (or "album" if they're in an album).

Do you have an iTunes Match account?  If so then I'm afraid I don't know how to get rid of a song, other than to suggest that instead of swiping across it perhaps you may be tapping it (thus downloading it from the cloud)?  If you don't have an iTunes Match account, then turn that setting OFF in Settings/Music.

Sorry, I'm not a Match user so don't really know, but there's got to be a way to prevent a song from getting onto your device and/or eliminate it from iCloud.
