When I update all of my apps in iTunes, they're automatically updated on my iPhone on the next sync, but not on my iPad. Am I doing something wrong?
Offhand, I would say that you're not doing anything wrong. It should work the same way on the iPad as it does on the phone.
Have you tried quitting everything and restart or reset the iPad before you try syncing again?
I found another thread on this topic and someone sugggested checking or un-checking the "Install all new apps" button. My was checked, so I un-checked it, and that worked, almost like it reset something in the system.
Weird, but it worked.
