Mine sync through iTunes with iOS.
I'm not sure how to move them from one Mac to the other besides Migration or copying the Mail folder.

i am totally confused now.
i am using IMAP for my accounts and i have an iCloud account and i sync my PHONE to my laptop using a cable but for some reason i am not recalling what functionality you are indicating i can get and how i can get it.
you are not talking about home sharing or something or other are you?
i would /love/ to avoid this. i have to dedicate like half a day to it...

It may be manual syncing through iTunes and not iCloud. It's been a while since I set it up.
The Info page in iTunes indicates you can transfer Mail account settings, which is likely what I remember.

I tried the technique in that linked article with another account on my Mac. It works, but I think you'd be better off setting up the accounts. Here's what I needed to do (note changes with Mountain Lion).
Open you user/Library folder and copy the Mail folder to an external.
Open the containers folder and copy com.apple.mail folder to external (ML change)
On the destination Mac, select Get Info on each of the folders.
Unlock the padlock in the sharing and permissions section.
Click the Add button and add yourself. Set you to read/write.
Select you, then use the Gear menu to make you the owner.
Select any of the other users (except everyone) and delete them.
Copy the folders into you User/Library folder in the same locations they came from.
If you don't transfer the keychain, then you'll have to set the passwords for all the accounts, along with the SMTP server password, if set.
Your original plan I think was easier.

email has driven me mad from day one.
i have about fiftly lines of notes in a mac mail signature so that i can remember all this for next time and in order to make sure i have it on the desktop i have to email myself an email with it as a signature then i go to the desktop and open the mail and copy it into a signature on the desktop.
then i do the same on the iPhone just so i have all this handy for next time.
lord what a set of entries this requires. seems like a no brainer to let me sync all this up somehow but maybe it is more difficult than i think.
