Did you back up to the computer or iCloud? Is the date of the backup in iTunes the date of an iCloud backup or a computer backup? And how are you determining the date of the backup on your computer?

I backed up to both. I am assuming that is a back-up date to the computer. However, it is definitely not the last back-up to the computer!
I just now backed up to my computer a few hours ago. That date did not change!

Where are you reading "that date"?

On the iPhone it shows the proper date the iPhone was backed up to my iTunes on the laptop.
Where on the iPhone would you see this? To my knowledge, the only backup date viewable from the iPhone is for iCloud backups, not backups to your computer.
However, the date on my computer iTunes does npt change.
Where are you looking to determine this?

I was reading it on the summary tab of iTunes when my iPhone was connected to my laptop.
I guess this is unimportant now, because I just got a replacement phone from Apple and now it reads, "this iPhone never has been backed up...."
So, now I am backing the new one to my laptop for the first time.
Thanks. I'll come back to this if the same thing happens again.
