All you lose are preference files you no longer use or need. Garageband will simply recreate them when you next run it.

com.apple.garageband. plist stores:
- Everything you are setting when using GarageBand's Preferences panel: Cycle Recording on or off, Audio Preview settings, keyboard sensitivity, your keyword layout in the loops panel, Auto normalize setting, your personal info. So if now audio settings are wrong and you do not hear some instruments, or loops and buttons seem to be missing, check your Preferences setting.
- Also it stores the size of the GarageBand application window
- and also the "recent" file list.
But as Kappy said, all that can be recreated - only you will have to setup GarageBand again.
