Gulp, I never use TM myself, but...
Have you looked through Pondini's extensive TM help site?
Can't imagine something not being covered there.
As far as recovery, I don't think it'll help with a single corrupt file, but...
It may be possible to recover some erased ones, but you must quit using the Computer immediately, because the OS will think it can write to those freed blocks on the disk.
Either boot this one in Target mode...
And recovering from another Mac, or booting this Mac from another HDD, then using Data Rescue...
(Has a Free Demo to see if it could or not, but you'll need another drive to recover to).

They have a trial version, so I guess you can see if your data can be recovered...

* been accidentally deleted.
* become unreadable due to media faults.
* been stored on a drive before it was re-initialized/formatted.
Your best bet for repairing you HD is DiskWarrior from Alsoft...

Sounds like maybe you are using Spotlight/Finder to search Time Machine for you? That doesn't always work.
But trust me, your Entourage backup will be there. You have to enter Time Machine itself and browse/drilldown manually into the folder structure.

As the others have said, TM should be backing it up.
Look in the Microsoft user data folder in your Documents folder.
