Assuming that the mail account works on other devices,
Try deleting the account from the iPod and reentering all the settings.

Hi, we tried that several times but it still doesn't work. I know the email address and password are correct. We have deleted the acct and started over, we have done a hard reset, checked the settings, and still it won't work.

You can try the standard fixes but I suspect it is an error in the setting you entered for the account.
- Reset the iOS device. Nothing will be lost
Reset iOS device: Hold down the On/Off button and the Home button at the same time for at
least ten seconds, until the Apple logo appears.
- Reset all settings
Go to Settings > General > Reset and tap Reset All Settings.
All your preferences and settings are reset. Information (such as contacts and calendars) and media (such as songs and videos) aren’t affected.

I may have to try restoring to factory settings because resetting didn't fix the issue. I'm at a total loss....
