If you don't want to store anything on iCloud, the easiest way is to open System Preferences > iCloud, and unmark "Documents & Data". This will only allow you to save documents on the hard drive of the Mac.
Also, I have found a command to save on the hard disk by default:
defaults write NSGlobalDomain NSDocumentSaveNewDocumentsToCloud -bool false
In theory, iWork should remember that you chose the hard drive to save your documents, but if it doesn't work, try the command
