I would suggest a couple things. If the same thing happens on your computer, then I would delete the audio book and redownload it using this article, and re sync the device.
Downloading past purchases from the App Store, iBookstore, and iTunes Store
IF the issue persists, I would reset the iPod to factory defaults and re sync the content over.
