There's always one recent project listed under "recent." It's the one you most recently opened by double clicking it in the "projects" view.
There is no way to remove it that I know of. You can double click another project in the "Projects" view to set another project as default.

The Project listed in the Recent section of the Library Inspector is the most recently opened from Projects View.
To change it, go to Projects View and double-click another Project.
Fwiw, this is, imho, inelegant and needless design.

since there is no way to get rid of that "Recent" project, you could try to use it as shortcut to the project you are currently working on.
If you set the "Recent" project to one of the projects you want to access quickly, different from the "Last Import" you have an easy way to switch between your last imported project and another frequently used project.
But if you want to get the entire "Recent" section out of the way, you can hide it completely, using the hidden "Hide" control to the right of the "Recent" caption.

Wow, never know what you'll learn in these forums.
There was a project "stuck" at the top of the recents list from over two years ago. I usually select a project to work on from from the list of projects lower down where they are sorted into yearly folders. It must have been a couple of years ago when I double clicked a project from the panel of all projects, and it's been "stuck" there ever since. Thanks to your advice I'll keep a current working project there as a shortcut.
