E-mails are not saved to the iPhone by default, however you can do so manually, as far as viruses from bad e-mails, theres always a possibility, but the security software Apple uses is very god, and getting viruses from bad e-mails is very unlikely, such would probably only come from downloading a bad attachement

The odds of a non-jailbroken iOS device getting a virus from a downloaded attachment (or anywhere else for that matter) are virtually nil. There have been no reported cases of such an occurance.
