It sounds like you have successfully uploaded the photos to the Dropbox servers, so you should be able to delete them from the camera roll without losing them.
I would check the Dropbox folders from a computer or another device to be sure that they are saved there before deleting it from the iPhone. You may also want to backup the photos in second location like a computer just in case the photos get deleted from drop box accidentally. It's always a good idea to have at least one extra backup of the photos that you want to keep.
If Dropbox is working for you, I recommend sticking with that. Photo Stream will hold only 1000 photos for up to 30 days, so they eventually will drop off. It's used more for syncing the photos to your computer rather than a backup of your photos.

Thank you so much! I appreciate you taking the time to write, and that's exactly what I'm going to do - (I also have CDs with my backed up pictures), so it's not that I'm obsessive about collecting the pics, but it's because I have a side business (SendOutCards) where I can make greeting cards using my own photos, and after creating them, they're printed by SendOutCards in SLC, Utah and mailed to your friends' mailboxes.... BUT to be able to use my pictures from whatever computer or device I'm sitting in front of at the moment, I wanted to make sure I have ALL my pictures ALL the time in a place where I can get to them and use 'em to create the cards. Nothing worse than being on the home computer and realizing the pic I want is on my office computer. So I just needed a way to make sure I always have them..... dropbox does that. AND I didn't know that photo stream drops them off after 30 days!!! So thank you! And I was afraid to delete them from anywhere until I was sure it wouldn't hurt anything to clear out the camera roll and just have them on dropbox.
I guess the right thing to do is to organize them in dropbox as I take them. Make sure I have a CD or DVD backup of everything at certain intervals, then delete the photo stream and/or camera roll and just start fresh, knowing that dropbox will let me access them from anywhere and I don't end up with pics all over the #!%$# place!!

Oh, I'm happy to help! And I'm glad that made sense and cleared that up for you. I think you have a perfect system: backing up important photos to discs and also keeping the photos you need to access from anywhere on Dropbox.
