I've been using DreamHost for a long time ad have had no problems.
Besides mail do you also have a website?

a website and a blog.
just spent another hour and a half on a sunday getting the processes deleted from my site so it is running and then - like an idiot - working with a technician who was convinced they could solve "my problem"...

I was having this same problem also. I was having Server 500 errors on my sites on a regular basis, this due to the number of imap processes stacked up on my HostGator server account. Before I solved the problem I was seeing numbers like 39/25 in my cPanel, no wonder I was getting my those 500 errors.
I did 2 things to fix the problem.
1st I dealt with my iPhone. My iPhone is receiving the same emails as I do on my iMac Apple Mail account, so right there I guess I was doubling the calls to the server. Since there is no solution with the Mail app on the iPhone I simply set up new Gmail accounts, one for each account on my sites that I wanted to check on my phone. I setup forwarders in my cPanel to send new emails to these Gmail accounts. Deleted the old accounts on my iPhone and set up new ones for the Gmail accounts.
I checked m cPanel for the number of processes running and I was down to 22/25, much better but too close for comfort.
So next I dealt with Mail on my iMac. I like Mail but there is no way to deal with these imap issues so I replaced it with another client, POSTBOX. In the advanced settings you can limit the number of server connections, the default is 5, I set it to 1.
Checked my cPanel and I was down to 7/25. I have been monitoring it for a few days now and it is pretty much stable between 7 and 12. I have also not missed a beat with my emails, things are running smoothly. I also like PostBox, it has the look and feel of Mail for the most part. Downside is tht it is not free, it's $9.99, but for me well worth it to get rid of the problem.

i was not aware that postbox was still alive. i purchased this software and found that there were functionalities that had controls in the UI which were not operable and that some of the tools were very buggy. then they closed the forums so you could not talk to other users and then eventually they stopped providing me support. in any event, i have been thinking about installing and going back to Thunderbird so do you mind if i ask you some follow ups here?
i have about ten email addresses which sort of complicates things i think as it is uber helpful to know where i am getting an email to. i mean, one of my email addresses is "email@example.com" (super important to me) while others are to other addresses. also, i have two domains so if i just send everything to one address this is a bit confusing.
/anyway/ i /tried/ setting an "firstname.lastname@example.org" and set up forwarding in the CPanel to this "all@" address. then i simply put this one "all@" domain in my email client. for some reason i think this created duplicates in some cases. do you happen to know if FORWARDING as you describe means it will show up in BOTH the forwarded email address and in the ORIGINAL account? i mean, presumably the fact that you have the GMAIL account on your iphone means that this email gets forwarded to this GMAIL address (in my case /all/ my email addresses could get forwarded to this GMail address) but it ALSO shows up in your email client when you enter your email addresses INDIVIDUALLY?
do you know what i mean? i mean it sounds like you are suggesting (again really helpful) that i get my email in bulk on my iphone with all of them forwarded to this GMail address but if i ditch Mail and set up a client that presumably limits processes that i can get the mail individually on my laptop and on my desktop, yes?

sorry for the offtopic here but i am also using Sparrow (in addition to Mail) and i am wondering if anyone knows if there is a way to limit the processes in Sparrow (http://sparrowmailapp.com). i have tried to get feedback from the site but it appears they are in transition as a consequence of being sold/bought.
anyway, i'd love to use my existing setup due to the simplicity of not having to re-enter all my info for all my accounts in Thunderbird if i don't have to.
