A 13" MBP is not ideal for video editing, but if that is what you will have to use, install the maximum amount of RAM that the MBP will accept and install a SSD in place of the 500GB HDD. If you provide the model identifier, then we can provide the specific RAM that your MBP will accommodate.
Any high quality monitor will do.

In addition to the above upgrades, you will need to invest in some external drives to store all of your media on. Your computer's HDD (or SDD if you choose to upgrade) will be specifically for the NLE system you use. All of your media should be stored on an external HDD (SDD thunderbolt perferably but a 7200RPM HDD works fine too; connected via a FireWire 800 cable or Thunderbolt. Do not use USB 2.0. USB 3.0 is fast but I'm not sure it's the best connection type when editing video specifically). This way, it provides optimal editing performance.
In terms of monitors, you will probably want two high quality monitors because your of how small your MacBook Pro screen is.
Maybe you could provide some details on the job so we can get a better understanding of what would be the best options for you. Like what was the footage shot on or the file format/codec? How much footage? SD, HD, 2k+...? etc. etc. Any information you can provide.
Also, you will need a quality set of speakers, even if you are not the sound editor/mixer on the project.
