Restoring the iPhone should take anwhere from 3-5 minutes.
It could be longer depending on the type of restore.

For example, a firmware restore (DFU) restore, can sometimes take up to 8-10 minutes to complete.

After the restore it will download all apps that were there, that can take some time....
