Q: What cable from Apple do I use to connect an AirPort Express to a printer?
What cable from Apple's website can I use to connect an AirPort Express to a printer. (Specifically, the Epson WorkForce WF-2540 All-In-One Printer) The only USB cables from Apple I can find are the ones to ethernet and micro-USB.

It would not make much sense to use a USB cable to connect to the AirPort Express......since the USB connection would only support the print function on your Epson All-in-One device.....nothing else.
Advanced features like scan, copy, fax, maintenance etc. would not be supported over a USB connection to the AirPort Express.
As John mentions, you can connect using wireless for full functionality. You could also connect the All-in-One to the Ethernet port on a new AirPort Express since the Epson device supports full functionaliy over Ethernet as well.
