Is my music recoverable after accidental switch to iTunes match?

iTunes match was accidentally switched on on my iPod touch, which had thousands of songs not otherwise on a home hard drive. It only takes one click to delete all that music. (I'd have needed a devastating fire at home to do teh equivalent of my record collection.) Have tried restoring a 'back-up from computer' but while the iPod touch in iTunes is showing that it has all these files on it, when I go to the settings on the iPod touch itself it seems to have freed up all the hard drive space - i.e. my music appears to have been deleted for good. Is that the case? And if so, I'm not sure I understand why, given that iTunes match stores the music in the cloud, not on your actual device.
