However, the part you want to replace may require that the RAM is removed, so in that case, remove the memory

I'm sure that the instructions give that step for a reason, so I would suggest you follow them if the instructions for the component you wish to replace recommends it. It may be to avoid mechanical damage when you remove the case, if the repair requires that. If it just requires removal of the display and nothing else, then as mende said you can probably skip the RAM removal step.
