misshelen, when you're in the Podcasts / List view, you cannot remove the old episodes from your list. If there's a little cloud icon beside the episode, then it's "in the cloud" and not on your computer - Apple wants to remind you it's still available, I guess. WHY they've done this is beyond me: I always much preferred the List view for managing podcasts, and iTunes 11.1 has rendered it unuseable.
What I suggest: don't use Podcasts / List view. Instead, use the "My Podcasts" or "My Stations" pane. They're not as good as the List view used to be, but they're a lot better than it is now.
Now, if you're trying to DELETE the files from your computer itself (rather than remove the files from the list of podcasts available): nbar's information is out of date I believe. I've found that with iTunes 11.1, if you delete a podcast episode WITHOUT PLAYING IT, iTunes will download it again for you (absurd, but that's the way it is). Instead, mark the episode as played - the next time you sync podcasts, it should disappear.
The fun part is that iTunes also keeps deleting random slightly older podcasts from my lists. I can't get rid of the ones I want to get rid of, but I can't keep the ones I want to keep. All great fun, and I'm being driven away from Apple's handling of podcasts pretty darn fast.

Thanks but I can get rid of old episodes if they been downloaded. The ones I am trying to get rid of aren't downloaded. It seems this new version of iTunes shows all epiodes of certain podcasts. Some of those episodes have been downloaded, listened to, and deleted. One of my podcasts started in 2007. I see all it's episodes back to 2007 and I can't delete them. It seems I have to download them then delete them. Given that this podcast released three episodes a week, that is a heck of a lot of episodes to download just to delete. I don't want to see them.

Thanks for the awesome answer. I agree with you. I like the list better. I guess I will have to use my podcast for now unless Apple decides to pay attention to us.

The new iTunes keeps downloading old podcasts that I have already listend to previously!
So annoying and doesn't make any sense!
