I want to make photo cards (as I have in the past in iPhoto) with a full picture on the front cover and a totally blank inside. I can't seem to find an option to do that anymore. Any ideas?

Check the layout section for the card you've selected.  Most themes will offer a single photo on the front with or without text underneath.

What theme are you using? With the holiday colors theme you can select this layout

leave the photo blank (ignore the warning you'll get when trying to order)

    and end up with this:

Always preview the card by Control (right) - clicking on it and selecting Preview Care before ordering.  Be sure to select the background color you want for that page.

Other themes may have similar inside pages you can use.
