Same for me used to take around 3 minutes, now takes around 25 to back up, plus my battery dies about 1/2 way through the day & that's with a Mophie charger attached!

I've made two changes to deal with the iOS7 sync problem. 1. Backup to iCloud instead of my MAC 2. Don't sync with iTunes until Apple fixes the problem whatever it is.

Same here, i turned on "Backup to iCloud", this helps. Disc Space usage was also out of sync between the iPhone and the display in iTunes. Took me hours for this, never had similar problem with earlier version!

I clicked on something in iTunes and was able to see what was going on in Step6 waiting for items to copy. It showed it was downloading thousands of Genius results. I think they need to fix it. I have days of music in iTunes and think this is the problem - way too many geniuses in the background. I will now disable Genius in iTunes and see what happens

I was having this same problem with iPhone 5 with the latest version of iOS 7 and iTunes. It was just taking forever on the 'waiting for items to copy' step.
I disabled Genius on my iTunes setup, and immediately it resumed and completed that step. Seems like it was waiting for Genius results that weren't there, or weren't available.
I have a large iTunes library and still like to manually manage the music on my iPhone.
I guess I'll live without Genius until Apple can fix this.
iTunes Genius can cause manual sync of music to iPhone to hang for a long time.
