I have iPhone 4S, and I have the same problem. Playing "all songs" in a given Genras was how I played my music most of the time. Now this feature, along with others I've used regularily, seems to be missing.

Marcin, I actually found the problem and now I feel stupid. DOH!
After you select Genre and then the genre you want, look at the top where it says Repeat, Create and Shuffle All.
Turn Repeat off. Then choose a song, go into Now Playing and turn off Repeat again (repeat off, repeat artist, repeat song) . Then go back to Genres, then re-choose the Genre. Now you can play all.
That's how I was able to get mine to work. I don't understand why there are so may steps to do one simple function of play all. Perhaps in the update this will get fixed.

Thanks Bttrfly29, but I'm afraid this is not working for me on an iPhone. When I select Genre and then the genre I want, there are no "Repeat, Create and Shuffle All" options at the top - I think this is specific to iPad interface.
On an iPhone I used to be able to scroll 'above' the list of artists and there would be a "Shuffle All" option there. A "Shuffle All Songs" option still appears in the expected location in many of the lists, for example if I traverse the above further by selecting an artist with multipcle album, the "Shuffle All Songs" options does appear above the top entry in the list. I think this is just a bug introduced in the redesign of the interface.
A temporary work-around is to create a playlist with everything in a genre.
[Edit] Except that creating a playlist, there is no option to select by genre .
Hope this is fixed in the first update.

Sorry Marcin. ****, I asked all my iPhone users if they had upgraded to the new iOS and they all flat out refused to make the change. I was hoping to have an answer for you. I downloaded the user guide for iPAD for iOS7 and that was no help to fix the Genre issues. I downloaded the user guide iPhone and it was just as un-user friendly which is hard for me to swallow because usually Apple makes products that you can figure out what to do.
I am going to post images but this is for iPAD users only. I hope it helps someone with iPAD issues. I'm sure there is an easier work around but this is what I have found works for me right now. If there is a quicker way to do this, I hope someone will post it here.
Choose your Genre
Choose a song from that Genre
Up in the right corner you will see "Repeat," "Create," and "Shuffle". Make sure none are highlighted.
Go to Now Playing and then select Shuffle.
Then go back to Genre and hit the fast forward button. your Rewind and Fast Forward features will be greyed out leaving only the play button. If you notice, the Repeat, Create and Shuffle features are also greyed out.
Hit Play again and then go to Repeat. You chould get a drop down menu that allows you to choose Repeat All.
Once you have Repeat All in place you can choose to shuffle all the songs or not. (see both highlighted below)

Hi Bttrfly29 thanks for posting the screenshots. I was unable to follow all the steps because bizarrely I don't have the 'create' button or the repeat drop down menu on my iPad 3. I was able to get the same result, however, following much the same process - select Genre, select artist (best to select an artist with just one song), play song, go back to genre list, tap fast forward button, tap play button.
The method above doesn't work on iPhone however as the genre screen doesn't have the play controls. The only way I have found to shuffle a genre on iPhone apart from using Siri (and this also work on iPad) is the following. Search in the music app to find the genre, then select the genre from the search results, then select 'shuffle all songs'. This is the method that works best for me.

Your iPhone work-around worked for me. This is awesome. I'm still looking to see Apple fix this, but at least there is a work-around.

The create button is for iHeartRadio. You can manually create a station (artist, genre or song) or from your music playlist from an artist or from a song. I know that users in the UK do not have this feature and I believe that there might be certain areas in the US that still might not have this feature.
I'm in the Philly/NJ area and I am loving using the iHeartRadio. I can purchase any song I want and I don't need to use Pandora. I've created 10 stations so far just from my music and added more based on the suggestions.
The feature, if you ever get it, will allow you to search either for the top Hits, Random songs or completely obscure. You can also add artist just like you can in Pandora. I hope that you will get that feature soon. It's completely integrated and very convenient if you're a music head like me.

You're welcome Marcin, glad RolltheBeats was able to help you with the iPhone sitution. I plan on passing it on to my friends if and when they upgrade. Hopefully by then Apple will have fixed this situation.

 Launch Music App
 Select "Songs" (lower right corner)
 Enter desired "genre name" in the search box and search
 Scroll to matching "Genres" section and select desired Genre
 Scroll up and select "Shuffle All Songs".
