I do not use Mission Control but have you tried going to Applications and dragging the Mail app to the dock. Then you can open Mail from there and then open different windows in Finder or in the Mail app.

I was hoping you wree on to something. I already had the Mail application in my dock. So I removed it, pulled it back out from the main Applications folder back onto the dock and tried restarting the application - unfortunately it restarted right into its own Mission Control screen - full size just like before...
Thanks for trying though! I might try other variations of moving the mail app around or restarting it from Applications folder to see if that works. If anything does I will repost.
Anyone else have any ideas?

To anyone who is viewing with a similar problem.
I made a bit of progress. With Mail app in the dock but not open, I created a new Mission Control desktop screen. In that screen, I opened the Mail App and it popped up full screen just like before; however this time I had some drop down controls if I went to the very top of the screen that I don't think were available before - to the far right was a screen size changer icon. Once I hit this, my mail was a "normal" window and I am now able to open multiple windows at once - huge relief. Mind you - this is still on a different Mission Control panel that I can easily swipe too. I can live with this until I find a 100% fix back to where I was.
If I figure that out, I'll repost.

OK, I think I know what you meant as far as the window being full screen. If you go back to your original window and put your curser all the way to the top in the menu bar you should have the resize icon appear in the top right. It is a blue square with white opposing arrows in it. Click on it and your window should return to normal size. Actually I think I am repeating what you have already found.
