Q: Ever since I got the new software update my iTunes on my phone is grey and does nothing!

Thanks for the question. If you haven't already done so, you may want to restart or reset the iPhone:

iPhone, iPad, iPod touch: Turning off and on (restarting) and resetting

If the issue persists, you will want to reinstall iOS:

iTunes: Restoring iOS software
http://support.apple.com/kb/HT1414
