Unfortunately iOS cannot be downgraded.
Did you try both "Invert Colors" and "Bold Text" in accessibility?

My mum is 76 and is suffering from eye strain and tension headaches looking at her screen. She went back to using her iPad 1. It gives me a headache as well. Good luck.

Please give Apple your feedback:
You can choose on which device you'd like to give feedback. I'm sure they'd be interested in your plight. Good luck.

It's really bad for those of us with poor vision.
I have no idea what the gray words say at the top right in the music app on my iPad. I even tried using a magnifying glass. Still couldn't read it. I can't read the texts on my iPhone. The icons are are to see.

Vancouver22, this threads touches on iOS7 for the visually impaired. Maybe there's something here that can help you. Please notify Apple of your plight. I'm not visually impaired but it gives me a major headache.
