An iPad isn't a direct replacement for a laptop... its a different device, but can do similar things to a laptop. Depending on all of your requirements, an iPad may be the right choice for you.
Regarding some of your requested features... For SD cards or USB connections from your camera, you could use the iPad Camera Connection Kit. You can import all of the photos into the iPad photo app. You can use an RGB adapter plugged into a projector, or use an Apple TV to wirelessly transmit your iPad to display from your projector. As far as editing goes, there is limited editing capabilities with the default photo app, but I'm sure there are many 3rd party apps that offer more advanced photo editing. For PowerPoint, you can use the Office2HD app (which I use a lot on my iPad) to created/edit/play PowerPoint documents. And there is a video app that comes with iOS that you can use to play videos.
So while the iPad isn't necessarily a replacement for a laptop, it sounds like for your needs it might work. You may want to go to a store that sells iPads to get a demo from a sales person to make sure it fits your needs.
