Are you using the iPhone contacts app to store your contact information? Or are you using a 2nd party such as gmail? I use gmail so that I never lose a contact, have access to them anywhere and if I should ever choose to get a phone that is not an iPhone I can.
Gmail doesn't offer the option to change the device lable to iPhone, but I believe that the Apple contacts app does.

I am using Apples default Contacts App. I am wondering if this is a bug and anyone has experienced these same issues. Technically you can change the label to iPhone for contacts with an iPhone, but only coincidentally changes.

Sorry but I can't make sense of that sentence. The iPhone label is there if you're using iCloud. While in a contact, tap "Edit" in the upper right corner. Tap the label (Home, work, Mobile) to the left of the phone number. Select one of the existing labels or scroll down to the bottom of the list and tap "Add Custom Label". If you don't see that option, it's because you're syncing to an account that doesn't support them.
There is no "Gamecenter" phone label because Gamecenter IDs aren't phone numbers. However, you could use the Social Profle section for that. Tap "Add Social Profile". Tap where it says "Twitter" then scroll down to "Add Custom Service".

Well, let me re-phrase both points and maybe you can understand my perspective.
The iPhone tag randomly appears and there is an option to select which tag you like, but I cannot create a custom tag. iCloud is my default account for contacts.
I am referring to Game center under social links, not under phone number.

I understand. If it doesn't work the way I described it, there's something wrong. Have you tried resetting your device by pressing and holding the Home button and power button until the silver apple appears?

Thanks. I just turned off contacts off my hotmail account and looks like I can easily edit labls now. Kind of wierd because I set iCloud as my default Contact list.
