tap and hold any message within a conversation, then hit More.
next, highlight each message/picture you want to delete so it is checked off on left side.

Tap and hold the photo, tap More, select the photos/messages to delete, tap the trashcan icon at the bottom left.

Thanks both. This helps a little bit. I have SO much history that it's going to take me forever.
I would say I'm surprised that Apple doesn't have an easier method of doing this, but I'm not really surprised. Seems like everytime I try to do something simple on iOS it's anything but simple.
Maybe it's their way of forcing me to upgrade to a phone with more storage...

You can always just erase the entire conversation - that is simple.
There are apps (not phone apps - PC apps) that will allow you to backup your message history so you can still keep it, but not take up all that valuable space on your phone.
