Well, I guess the threat of sicking the "Apple Support Communities" on it worked. I thought I had tried everything several times before I posted the question. However, after the fifth or sixth 'turn everythign off and start from scratch' episode, it works now. I just home I remember the magical sequence!!

I found the answer.... here it is. I turn on the phone and connect the bluetooth (in the helmet headset).. then you plug in the iJet remote using the 30 Pin Lightning adapter which defaults the output to Airplay. Swipe the phone up from the bottom screen when the phone is locked. Switch from Airplay to your headset and you are golden.
Everything then works as expected. Infact you can charge your phone on the bike if you have the appropriate power cables.
