How do I export audio files in MP3 format?

You don't. You export and then convert with one of the many tools available.
iTunes can convert songs to mp3, for example:
You can convert the songs that GarageBand creates,when you share the songs to iTunes on export. I'd share them in CD quality.

That is why I tried to point you to iTunes, that still can do it.

So share your GarageBand song to iTunes in CD quality, and then use iTunes to create the mp3 version, as I described above.

Thanks for the tip, but still it does not show Apple openess to share with standard formats. I am doing weekly radio shows and mp3 is the only format used to syndicate it. Why are they are trying to be Microsoft (and this is what it means: propriary formats in something that it only used on Apple... but there is a world out-there that needs these amazing tools that Apple is creating and is helping 150K people in the world (this is my show)... and here I am struggling to get it in a mp3 format :-(
I feel that this is a step back to the previous version. the new version looks good, and it is powerful, and yet it fails to meet the needs of people. I do hope Apple will get the message and restore the export (or I have to get used to messing around or look for alternatives).

I have another question: it does not seem to stop at the end of the recorded podcast (which is 57 mins, but goes for more that 2 hours), is there a way to stop it? Or do I need to find yet another tool to truncate it...

I am a professional voiceover talent and I rely on Garageband for part of my livelihood.
When posting my auditions on various "Pay-to-Play" sites, I am REQUIRED to use MP3 format. When I discovered that Garageband 10.0 does not allow you to "Export" to MP3 format, I was very upset! Some of the other workarounds (e.g., sending the Garageband recording to iTunes and using iTunes to convert it to MP3, using 3rd party software like "Audacity," record using Logic Pro and then "Bounce" the recording down to an MP3, etc.) slows my up, complicates my life, kills my productivity in how many auditions I can get out the door when I have limited time!
The GOOD NEWS is that I happened to stumble across, in the "Applications" folder, a "Garageband 6.0.5" folder. And there it was, the old version of Garageband that has the MP3 encoder (not to mention all of the EQ presets that are nice and quick to use)!
So check your "Applications" folder and just go back to using the good, old, reliable Garageband 6.0.5. You should be fine again.
I agree with you, Green Lantern, that the extra steps seem silly but that's great that you were able to locate the old version and keep going with that!!
As far as my additional thoughts - the extra steps are unnecessary seeing as (as a Podcaster) that I need to export my Podcast as an MP3 file to ensure compatibility for my listeners through the iTunes store and although the old version may exist for now, it will eventually run into compatibility issues that we'll have to deal with eventually. I would suggest that if you have an issue, that you submit your feedback to Apple and let them know to add the feature back. Hello, I have recently upgraded my version of GarageBand along with the upgrade to Mavericks and in doing so I have noticed a feature that seems to have gone missing that was quite useful. After I record a podcast, when I attempt to export the project by clicking "Share > Export Song to Disc", I see there is no option to export as an MP3 file.
I understand the rationale for Apple to want to export the file as an AAC or AIFF file as these are native to Apple, but since almost every Podcaster has to distribute their files as an MP3 to ensure that listeners can enjoy the content (through the iTunes store), I find this omission perplexing.
As with all new versions of software, I understand that some features come and go, but I strongly believe that this one should be added back to ensure that people using GarageBand for Podcasts (or for other reasons) do not have to add extra steps into their workflow in order to properly submit their Podcast to the iTunes store (to ensure compatibility among devices). That is why I chose the Efficiency/Workflow category - because although there are ways to convert to an MP3 file after the fact, it is inefficient and could lead to loss of quality of the end product due to multiple conversions.
To work around this I am currently exporting the file as an AIFF file (CD Quality) and then opening the file in Fission and converting it to an MP3. The extra steps only add time and complexity to a Podcasters workflow that are unnecessary (at least in my opinion). Hope this helps.

you can not open files from Garageband X back into Garageband 6
BUT
i have found it very useful to open both applicatiions at once
the recording studo garagebandX
- most of the filtres are a bit more refined and the interface is that much more sophisticated - access to all the Garageband 6 filtres are through legacy and it is a more enjoyable environment in which to work
mixing studio
bounce the tracks to itunes - (often combining voices that make sense into one track (strings example) - which results in smaller file sizes
- then create a mix track in garageband6 by dragging the tracks from the mediabrowser.
export with full capability
i've only been doing this for two weeks since i discovered this inconvienience to customers but as far as i can tell the production quality for upload is equal. and there is the added bonus of making a natural streamlining of tracks that is a little like having a good technician at your side !
and most importantly the full access to the customisation of .mp3 files.
What about the top menu "Share/Export song to disc" Select "Compress with mp3" works for me.
(I translated the menu text to english so exact menu text may be slightly different.)

Yoda must be using the older version of GarageBand since version 10 doesn't have an MP3 export option. best bet is to export as AIFF Uncompressed and then use another program to convert it to MP3. The extra steps are quite annoying, but at this point, it's the only option.

Just a slight mixup here, but you're actually using GarageBand 2011 which is version 6.0.5. You are correct that MP3 exporting is possible in that version, but with the 2013 release of GarageBand version 10, they have removed that feature.
