Bootcamp partition size

I'm wanting to use Windows OS to play PC games on my mac, so after some debut and realizing that the boot camp partition isn't permanent I installed Windows 7 Ultimate onto my Mac. During the process it ask how much disk space you want to patition off for Windows to use. It wouldn't let me do any more than 27 Gb even though I had way more than that avalible, which I checked several times to make sure. Now I don't have enough room to store anything else. Windows is taking up almost all the 27 Gb that I gave it. Is this because I'm using Windows Ultimate? Is there a way to play the games off of a disk, such as a USB instead of having to install it?
