The obvious question is "What happened to the WiFi antenna?" Whatever damaged the WiFi antenna could have damaged other things as well. The only way you're going to know if you can make or receive calls and texts is by trying.

No significant damage has been done to my phone. I am wondering if I were to permanently remove the wifi antenna from the phone (to remove wifi capability completely) would it render the actual phone functionality useless.

The likelihood of you damaging the phone in some way while doing this, redering useless, is very high. Opening up the phone at all will void your warranty.
