Well, this is the reason Apple sells iPads in multiple capacities. There is no way to expand the internal storage of the iPad, but there are some things you can do to manage your usage.
Games and video take up a lot of space. Delete apps that you don't use or use rarely. Apps can be downloaded again free of charge. maybe mix it up a bit with the kids. Give them a smaller selection today and change it tomorrow - or next week. It will help to keep them interested as well.
Offload your photos to your computer once you no longer need them. Or use a cloud photo app like Flicker or Picassa if you need access to them.
