Q: Have categories been removed from latest version of numbers?

I just converted a spreadsheet to the latest version of numbers and it seems to have eliminated the ability to group tables in categories.  This is kind of a key feature IMO and it seems to have disappeared completely.  Is this true?

If so this is definitely moving backwards I believe... frustrating...

I would say the feature has not been included yet. Numbers 3, and the other iWork applications have been re-written from square 1, and many features of the previous software of the same name haven't (yet) been built into the new applications.

Several of the missing features have been scheduled for inclusion within the 'next six months' (ie. by May 2014).

Provide Numbers Feedback to add your request for this feature to those already sent to Apple. You'll find an item with that name in the Numbers menu.

Meantime, unless you have deleted Numbers '09 from your hard drive, it's still there, and functions just as it did before. Any file you have not yet opened and saved from Numbers 3 should stilll be accessible. Those already opened/saved in N3 will need to be opened there and Exported as a Numbers '09 (Numbers v2) file.
