How do I transfer PDF documents from iBooks on iPad 2 to my Mac Air. Other than email each document.

    You're in the wrong forum.

You use iTunes on the MacBook Air and connect your iPad and sync. Then copy the PDFs out of iTunes if you want.

You can also upload the files from the iPad to a cloud service such as Dropbox (you'll need an account and their app which will let you access the files) and access them while logged in to that same account on the MacBook Air (you can access via the Web).
