If you have enough memory to run all your applications, nothing. You will only be able to open more applications at the same time, but you will not experience better performance with the same applications.
However, if you run out of memory quickly, not only will you be able to run more applications at the same time but they will work better.
You can determine whether you need more memory or not by checking the amount of free memory in Activity Monitor:
