You can of course also copy the photos to the computer and then use Time Machine to backup.. you do not want to copy the photos directly to the TC.. that is not the way to store them. TC is for TM backups.
I have 3 diff iphones
I have 3 diff ipods
i have 2 diff ipads's
iOS does not backup to a TC.. it backs up to icloud or itunes.
If your local itunes is being used to backup the devices then the iTunes will be backed up by TM to the TC.
is 2TB enough? or 3tb to better to go with?
You can add extra capacity to a TC by plugging in a USB drive.
Or as many as you like via a powered hub.
But the USB will be slow.. so best to keep your files on a
very large hard disk installed in the Mac Pro since it is the only computer that you can add standard drives to..
Load in a couple of 3TB drives in there and use that via the network.
