You have to first backup your iPhone to computer, that means sync your iPhone to iTunes, the backp file will includes your text messages, contacts and other data. But this kind of backp file is an unreadable format, you cannot read and open it. You need iPhone backp extractor app, it can extract all data from iPhone backp to your computer for read:
There are many thid party works like: iStonsoft,iPubsoft, Coolmuster, Vibosoft, and more...
Vibosoft iPhone extractor:
and more..., like Sinllsoft, iBmolsoft, Sansoft and more...,
all of them works, but not free!.
If you have a new iphone and your are trying to tranfer your old iphone 3GS messages to your new iphone, then you just need to 1) create a backup of your old 3gs via iTunes (this is already probably done as with each sync, iTunes would backup your iphone messages, contacts, settings, etc) and 2) restore your new iphone from the backup you created. This willow you access of your old iphone 3gs messages on your iphone.
I also have met this before and you just need an iPhone to Mac transfer to solve this. I always use the iPhone to Mac transfer on amacsoft.com, it's very easy to use and really works well. By the way you can use it to transfer other kind of files. Just have a try, wish it help!

Hi shizadmen, it seems that the Apple Support has deleted my reply (Ph@Apple on Nov 30 see below) because they thought i was doing advertising ( yes i wrote down the address of a software that may solve your pb but I have no relation with the sw developer, I'm not even a customer...).
Anyway you can find such software by asking one of your prefered search engines with the keyworkds used in your question.
If you want to see the message I got from the Apple team:

I think you need to use iTunes backup for this. Instead of just syncing, please try to force a backup in iTunes. Right click on the phone under "Devices" on the left-hand side of the iTunes window, and then click "Back Up".With that you can transfer SMS from iPhone to computer.
Besids, there're various tools to achieve that.More info please click: How to transfer SMS from iPhone to Mac.
It is possible to open the iPhone SMS database with a SQLite editor. It wouldn’t cost you a penny but it requires some technical skills. If you are not technically inclined, check this transfer iPhone text messages to your computer as Text and HTML format: http://tinyurl.com/save-iphone-sms-messages
