You're correct about those three changes. If you keep looking you will find about 50 more features that didn't make the cut for the release of Version 3, the iOS compatible version.
You can go back to using version 2 since it's still on your hard drive. Look for it in a folder in Applications called iWork '09.

Features Apple has announced it will be bring back.
On your point 2 if you frequently enter repeating values in a column and don't want to type them over and over again, note in the Workrarounds thread that Numbers 3.0 has a much enhanced Pop-Up Menu feature that in many situations is better than "auto-complete."
Probably best not to go back to Numbers 2.3 if you want to do data entry on the web or on the iPad.
