Select it in the iTunes sidebar, click on its name, and type a new name. If you're using iTunes 11, choose to show the sidebar from the View menu.

Connect the iPod to your iTunes Library. Double-click on the Device name when it appears in iTunes. Type in the new name.

By the way, I'm not sure which iPod you have, but the iPod Classic (where you've posted) does not use iOS.
