I've tried below and it helped to reduce my space from over 800MB to 300MB. I'm using Microsoft Exchange.
1. Emply your Deleted folder
2. Emply your Sent folder
3. Emply your Sync Issue
4. Compress your Ost file
In Mail app / Ios 7:
1. Choose Deleted folder to Sync
1. Choose Sent folder to Sync

I guess that only help if your device syncs to another?
In my case (in iPhone) I don't sync just because I need to save lots of mail on my computer while in my phone I just want to have a few.
This issue will soon make my phone a filled email device.

When it comes to "techie" stuff, I'm best described as clumsy. That said, I'm having the same problem with email usage on my iPad. In simple terms, can anyone tell me how to reduce the two gig usage? I have deleted all of my sent mail, emptied my trash, and reduced my inbox to a few emails without attachments. All of that has had no effect whatsoever, and I'm running close to the maximum storage capacity on my iPad. Can anyone help?

It seem as the support here is zero to none with best answer Bering to reset the product which I think is horrible and not a solution to the problem but just a sad fix to free space which at least in my caste will have me spend lots of time setting things back up the same way I have it.
This is a bug (?) which some update must be able to fix.

Is it possible to delete an account but save the emails?
I have 7 accounts and specific important mails saved. On my iMac I have much more emails and to sort out the ones I need will be a project.
This morning I got some emails with attachments and boom 100+ more space taken away even after deleted.
I've been chatting with apple support without any result. Their chat froze 8 times so after 2 hours I have up.
Apple is about to loose me as a costumer here really.

Create a backup of your device. Then reset it to factory settings. Now restore the device from the backup.
This has worked for me to clear the leaked memory, not to solve the bug itself though.

If you don't mind loosing all your saved emails....
Delete your email account and readd your email
Account. My brother recovered 5GBs.
Otherwise try Kuchenmann's advice and
Let us know if it works.
Apple does have a few problems but
Their integration is GREAT. I'm an
Ex PCer...ever since I got my iPad.
I can program in BASIC...I

It looks like therre are a lot of us having this problem! I posted this in another thread two weeks ago and didn't get a reply from anyone. Maybe I'll have better luck here.
I have an iPhone 5 with iOS 7.0.6 recently updated.
I'm getting messages that I'm running out of memory. When I check the "usage" in the General section, I find that I have a a huge GB usage (2.2 GB of 11.4 GB used) in email despite the fact that I regularly delete old email and then "Empty all" items in the "Trash."
I have a similar problem with my iPad2 - 4.2GB of 13.0 GB used.
In each case, I have lots of photos & videos stored and I'm going to start eliminating many.
What am I doing wrong to have so much email usage? How can I fix the problem?
