- the "EXIF" copyright field set by the camera; this field cannot be edited in Aperture, and that is what you are seeing in Preview.
- the "IPTC" field "copyright - this you can edit.
Aperture does not allow to edit EXIF fields, that are set by the camera - we are not supposed to falsify camera data.

To get the correct data you will need to change whAt the camera is putting there.
